Step 1: Choose ONE filling route. EITHER make the gochujang fried-rice component in stages 1–6 and use a measured 250 g of its cooked output, OR skip stages 1–6 and use 250 g safely stored ready fried rice. Do not add both. For the component route ONLY, heat its separate ½ tablespoon oil in a pan over high heat.
Step 2: COMPONENT ROUTE ONLY: add all 42 g ground beef to the heated component oil. Break it up and cook until browned and fully cooked, reaching 71°C (160°F) in the meat; no fixed cooking duration is specified.
Step 3: COMPONENT ROUTE ONLY: add the optional 50 g chopped kimchi, the white parts of the one component green onion and the one minced garlic clove to the cooked beef. Stir-fry for about 1 minute, until the kimchi is lightly caramelized if using it. Keep the onion greens for stage 6.
Step 4: COMPONENT ROUTE ONLY: add all 200 g cooked rice to the beef mixture. Break up the rice and stir-fry until hot throughout. If the rice was refrigerated, reheat it to 74°C (165°F).
Step 5: COMPONENT ROUTE ONLY: add all 20 g gochujang, ½ tablespoon ketchup and ½ teaspoon sugar. Add exactly 1 teaspoon soy sauce if using kimchi, OR 3 teaspoons if omitting kimchi. Stir-fry for 2–3 minutes, until evenly coated and slightly caramelized.
Step 6: COMPONENT ROUTE ONLY: stir in all ½ tablespoon sesame oil and ½ tablespoon sesame seeds, plus the reserved green parts of the component green onion. Remove from the heat and keep the actual finished fried-rice batch hot for filling. Stage 10 uses a measured 250 g from this batch; any remaining cooked rice is extra.
Step 7: For EITHER filling route, crack both large eggs into a bowl, add all ⅛ teaspoon salt and whisk until smooth. Use pasteurized eggs if following the soft-center finish; otherwise cook the egg mixture to 71°C (160°F).
Step 8: Have the selected 250 g fried-rice filling hot and ready. If using ready refrigerated fried rice, heat it thoroughly to 74°C (165°F) before filling. Heat the separate 1 teaspoon omelette oil in an 8-inch (20 cm) nonstick pan over medium heat. Spread all 80 g shredded mozzarella in an even layer and let it melt into a thin crust. Pour in the complete whisked egg-and-salt mixture and tilt the pan to spread it evenly.
Step 9: Cook the cheese-and-egg layer until the eggs are mostly set. For pasteurized eggs with a soft center, the source guide is about 80% set before turning off the heat, then residual cooking to about 90% set. Otherwise continue until the egg mixture reaches 71°C (160°F). Loosen the cheese crust gently with a flexible spatula.
Step 10: Add ONLY the selected hot 250 g filling: EITHER weigh out 250 g from the actual cooked gochujang-rice batch in stage 6 OR use the complete 250 g ready fried rice heated in stage 8. Place it in a line across the omelette center and fold the two opposite egg sides over it. The full component batch and the ready-rice alternative are not both used.
Step 11: Place a plate over the pan and carefully invert the complete filled omelette onto the plate so its cheese crust faces up. Alternatively fold it into a half-moon and slide it onto the plate.
Step 12: Optionally drizzle the plated omelette with Kewpie mayonnaise and garnish with dried parsley and/or the separate garnish green onion. Serve immediately as one portion.
