  1. Step 1: Heat pan on medium heat, then add 2 tbsp neutral cooking oil and 4 cloves garlic. Saute until lightly browned.

Uses 2 tbsp neutral cooking oil · 4 cloves garlic (minced)

Overhead close-up of chopped garlic pieces lightly browning in a thin layer of oil in the saucepan, with a white spatula.
  2. Step 2: Stir 5 tbsp hoisin sauce, 2 tbsp smooth peanut butter and ½ cup water into the lightly browned garlic oil until combined.

Uses 5 tbsp hoisin sauce · 2 tbsp smooth peanut butter · 1/2 cup water · four minced garlic cloves sautéed in two tablespoons oil

Overhead close-up of a dark brown, garlic-speckled sauce mixture resting in a stainless saucepan with a white spatula.
  3. Step 3: Turn the heat up to medium high, and bring to a boil.

Uses garlic oil mixed with five tablespoons hoisin, two tablespoons peanut butter and half cup water

Close overhead view of the brown peanut sauce at an active rolling boil, with large bubbles, visible steam, and a spatula resting at the pan edge.
  4. Step 4: As soon as the sauce boils, turn off the heat. Stir in 1 tsp sambal chile paste if using it. The sauce thickens considerably as it cools.

Uses 1 tsp sambal chile paste · sauce brought to a boil then heat shut off immediately

Close overhead view of the steaming brown sauce just after its boil, with a calmer, thickened surface and the stained spatula lifted above the saucepan.
  5. Step 5: Divide among dipping bowls and, if desired, sprinkle the 3 tbsp roasted crushed peanuts over the bowls in total.

Uses 3 tbsp crushed peanuts (optional) · sauce with optional one-teaspoon chile paste, thickens as it cools
