  1. Step 1: Preheat the oven to 375°F (190°C). Line a baking sheet with foil and lightly spray it with the separate baking-sheet oil spray. In a large bowl combine the besan (1/2 cup), rice flour (2 tablespoons), ginger-garlic paste (1.5 teaspoon), Kashmiri chili powder, optional turmeric (1/8 teaspoon), chaat masala (1 teaspoon) and salt (1/2 teaspoon). For a hotter version, replace half teaspoon of the two teaspoons Kashmiri chili powder with hot chili powder rather than adding an extra dose.

Uses Oil spray as needed to coat lined baking sheet · 1/2 cup besan (57 grams, gram flour) · 2 tablespoons rice flour (28 grams) · 1.5 teaspoon ginger garlic paste · 2 teaspoons kashmiri red chili powder (replace 1/2 teaspoon with regular chili powder for spicy peanuts) · 1/8 teaspoon turmeric (optional) · 1 teaspoon chaat masala · 1/2 teaspoon salt (or to taste)

  4. Step 4: Now transfer the prepared besan-rice flour-spice mixture to the bowl of peanuts. Using your hands, mix everything together so that peanuts get coated with the masala.

  5. Step 5: Add water a little at a time, about one to one-and-a-half tablespoons total, until the coating just sticks to the peanuts. Do not make a wet batter.

Water added sparingly to moisten the coated peanuts.
  6. Step 6: Arrange the coated peanuts in a single layer on the prepared sheet, pressing any loose coating onto bare peanuts. Bake at 375°F (190°C) for about twenty-five minutes, stirring once if needed. Check from twenty minutes and finish when crisp without burning. Cool completely before putting in an airtight container.
