Method10 steps · about 40 min
Step 1: Rinse the 200 g (1 cup) aged dry basmati in separate water, soak while preparing the vegetables, then drain fully. Use the measured ¾ tsp ready garam masala or biryani masala.
Step 6: Add the 200 g sliced mushrooms and sauté two to three minutes. Add only the drained rice from 1 and one measured cooking water: two cups ordinary pot or 1¼ cups Instant Pot or 1¾ cups stovetop pressure. Initial salt (to taste) was already used 4; taste this stock and use separate extra salt only if needed.
Step 7: only Instant Pot route: cancel Sauté, seal and pressure-cook HIGH five minutes. Wait five minutes for natural pressure release, then vent only if permitted by device instructions. Open only after pressure drops fully. Skip 8/9.
Step 8: only stovetop pressure route: cook the same assembly to one whistle over medium, then let pressure drop naturally and fully before opening. Skip 7/9.
Step 9: only ordinary pot route: bring the same assembly to a rolling boil, then reduce heat, cover and cook over low heat until rice fully tender and water absorbed. If still firm, add only a little separate extra hot water and continue covered. Do not add fresh full oil/water stocks.
Step 10: Rest only the chosen cooked mushroom rice from 7 or 8 or 9 four to five minutes, then fluff gently. Garnish with extra optional coriander and lemon juice and serve with prepared accompaniments.
