Step 1: Mix the 10 g wet tamarind with its separate 3 tbsp warm water. Work it until the liquid is dark and thick, then strain out seeds and fibres. Reserve the strained tamarind juice for the curry.
Step 2: Soften the selected dried chillies in hot water, then drain. Grind them with the shallot (100 g) or onion, garlic (2 cloves), candlenuts (3), ginger (1-inch piece) and galangal (1-inch piece) into a smooth paste, adding only 1–2 tbsp blending water if needed. Heat the 4 tbsp oil over medium heat and fry the prepared paste with star anise (1), crushed cardamom, turmeric, Indonesian bay leaves (2) and rib-removed lime leaves for about 3 minutes until fragrant.
Step 3: Add the young jackfruit (560 g) and mix well.
Step 4: Add 400 ml coconut milk, the separate 800 ml braising water, all prepared strained tamarind juice, 1 tsp salt and 1 tsp palm sugar. Bring to a boil, reduce to a gentle simmer and cook for about 2 hours, until the jackfruit is soft.
Step 5: Taste and adjust with optional extra salt or palm sugar only as needed. Turn off the heat and serve the finished curry immediately.
