Method6 steps · about 13 min
Step 1: Peel the 450 g potatoes and cut them into thin julienne strips with a knife, food processor or julienne peeler; a regular grater is unsuitable. Have the dried chillies deseeded and the fresh chillies and garlic sliced before heating the wok.
Step 2: Rinse the potato strips thoroughly under tap water to wash away excess starch, then drain very well.
Step 3: Heat the wok over high heat. Add the 1 tbsp oil, dried chillies and ½ tsp Sichuan peppercorns. Let them sizzle until fragrant, watching closely so they do not burn.
Step 4: Add the sliced fresh chillies, garlic (3 cloves) and well-drained potato strips to the spiced oil. Stir-fry constantly until the potatoes are cooked through but still pleasantly crisp. For a softer finish, cook a little longer and add only a few drops of water if needed to prevent burning.
Step 6: Serve the potato stir-fry warm as a shared vegetable side, optionally alongside ready plain rice and other dishes.
