  1. Step 1: Prepare 1 teaspoon minced garlic and 1 teaspoon grated ginger. Mix both with all 3 tablespoons soy sauce, 2 tablespoons sesame oil, 2 teaspoons honey and 1 tablespoon rice vinegar in a small bowl. Set this complete sesame-soy sauce aside.

Uses 3 tbsp soy sauce · 2 tbsp sesame oil · 1 tsp garlic, minced · 1 tsp ginger, grated · 2 tsp honey · 1 tbsp rice vinegar

  2. Step 2: Wash both scallion stalks. Chop their white parts into ¼-inch pieces and mince their green parts, keeping the two prepared portions separate. Both parts come from the same two stalks.

Uses 2 stalks scallions; whites chopped into ¼-inch pieces, greens minced

  3. Step 3: Cook all 170 g soba noodles in boiling water according to their package. Use the selected product’s cooking time; the author does not give a universal noodle-cooking interval.

  9. Step 9: Divide the finished sesame soba from step 8 between the two servings. If desired, finish with the separate optional 1 tablespoon extra sesame seeds and 1 tablespoon furikake. These are additional garnish allowances; the original 2 tablespoons toasted seeds were already used in step 7.
