Step 1: Start heating a pot of blanching water. Trim and halve the green beans (1 lb) or cut into 1 1/2–2-inch pieces; wash and drain. Trim the seafood mushrooms (2 oz) and cut into similar lengths. Deseed the half red bell pepper and cut into strips. Slice the garlic (3 cloves) thinly and halve the dried chillies.
Step 4: In the heated oil, stir-fry the prepared garlic and dried chillies for 20–30 seconds. Add the drained blanched green beans for 1–2 minutes. Add 1 tbsp ground bean sauce, the separate 1/2 tsp seasoning salt, 1 tsp sugar and optional 1/2 tsp chicken bouillon and stir-fry another 1–2 minutes. Add the prepared mushrooms and pepper and cook for about 1 minute. Stir the prepared slurry again and add it; cook for about 1 more minute, continuing as needed until the vegetables are cooked with the beans still crisp-tender and the sauce lightly coats them.
