Step 1: Choose one 200 g meat supply—pork belly, pork shoulder or beef (200 g)—and thinly slice it for stir-frying. In a bowl mix it with all the gochugaru, mirin, soy sauce (2 tsp), minced garlic (1 tsp) and black pepper. Thinly slice the mature kimchi (2 cups), keeping any juice it releases, and finely chop the green onion (10 g).
Step 2: In a pot, bring enough separate water to cover the tofu to a rolling boil. Add the firm tofu (500 g) and cook for 2–3 minutes, starting the timer after adding it to boiling water. Begin the meat stir-fry while the tofu heats if you can manage both pans. Drain the tofu and, when safe to handle, thinly slice into pieces about 5 cm × 5 cm (2 inches × 2 inches). A clean cheesecloth wrapping can help lift the block intact.
Step 3: Heat a skillet or wok well over medium-high heat and add the cooking oil. Add the prepared marinated meat and its marinade. Stir-fry for about 3–5 minutes until partly cooked; it will finish cooking with the kimchi in the next stage.
Step 4: Add the prepared sliced kimchi and its released juice, plus the 1 tsp sugar, to the partly cooked meat. Stir-fry for another 3–5 minutes until the kimchi is tender and the meat is fully cooked through, extending cooking if needed for the selected cut.
Step 5: Add the sesame oil (1 tbsp), toasted sesame seeds (1 tsp) and prepared chopped green onion to the fully cooked meat-and-kimchi stir-fry. Stir quickly to combine, then remove from the heat.
Step 6: Arrange the drained sliced warm tofu and the finished meat-and-kimchi stir-fry together on a large plate. Serve warm in four side-dish portions; the tofu and kimchi were cooked separately and are combined for serving.
