Method6 steps · about 45 min
Step 1: Heat the oven to 180°C/160°C fan/gas 4. Trim the fronds from the two fennel bulbs and reserve them. Cut each bulb in half, then cut each half into three wedges. Zest the one lemon and then juice it, keeping zest and juice separately.
Step 2: Bring enough water to cover the fennel wedges to the boil and salt it. Add all twelve prepared wedges, boil for 10 minutes, then drain well and discard the blanching water.
Step 3: Roughly chop the reserved fennel fronds and mix them with the 2 tbsp chopped parsley and all prepared zest from the original lemon. Keep this complete herb mixture for serving.
Step 4: Spread the drained cooked fennel wedges in a shallow ovenproof dish with the 175 g cherry tomatoes. Drizzle over the 1 tbsp olive oil and bake for 10 minutes.
Step 5: Nestle both raw salmon fillets among the already baked vegetables. Sprinkle with all prepared juice from the original lemon. Bake for about 15 minutes more, until the fish is cooked: a centre temperature of 63°C (145°F), or flesh that is opaque and separates easily with a fork. Continue briefly if necessary; thickness varies.
Step 6: Scatter the complete reserved fennel-frond, parsley and lemon-zest mixture over the cooked salmon and vegetables. Add the optional few black olives if desired, and serve as 2 portions.
