Method5 steps
Step 1: Prep work: Cut the okra (250 gram) into 1-inch pieces. Devein and remove the shells (tails intact) from the shrimps (20 medium). Toast the shrimp paste (1 teaspoon) (optional step). Slice 1 red chili. Grind cloves of garlic (5 cloves) and the remaining red chilies into a paste.
Step 2: Heat 3 tbsp oil in a frying pan over high heat. Fry the prepared garlic-chilli paste and shrimp paste for 2–3 minutes until fragrant.
Step 3: Add okra: Add the okra and water (4 tablespoon) to the pan. Stir to coat the okras with the sauce, and let it cook for 2 minutes.
Step 4: Add the prepared shrimp, the separate sliced chilli, 1 tsp salt and 1 tsp sugar. Toss briefly until the shrimp flesh is pearly or white and opaque throughout, then turn off the heat. Their colour and gentle curl are useful guides; stop once cooked to avoid toughening them.
Step 5: Serve: Transfer the dish to a serving platter, and ideally, serve the dish immediately with some steamed white rice.
