  1. Step 1: Stand each ear of corn securely on a cutting board and carefully cut the kernels from both cobs. Put the kernels into a small pot and add just enough water to cover them.

  2. Step 2: Bring the corn and water to a boil, then reduce the heat to low. Add up to the 2 tbsp optional sugar to taste, or omit it. Simmer gently for 10 minutes, keeping some liquid in the pot; add a little water only if needed to prevent it boiling dry.

  3. Step 3: Remove the pot from the heat and let the corn and its cooking liquid cool until comfortably cool enough to touch. Use a blender suitable for the mixture’s temperature and follow its instructions.

  4. Step 4: Transfer all the cooled corn and its cooking liquid to the blender. Purée until completely smooth, then add the 2 cups cold milk and blend until combined.

  5. Step 5: Leave the drink unstrained for a thicker texture, or strain it if you prefer. Divide into four servings and enjoy slightly warm or at room temperature immediately. For a cold drink, refrigerate until chilled instead of adding ice, which dilutes it.
