Method5 steps

  1. Step 1: Wash both medium cucumbers and peel them. Keep the peeled cucumbers ready to cut.

    Uses 2 medium cucumbers

  2. Step 2: Cut each peeled cucumber lengthways into quarters. If their seeds taste bitter, scrape out and discard those seeds. Cut all the quarters crossways into half-inch-thick pieces.

    Uses Both prepared cucumbers

  3. Step 3: If using the optional basil, wash all six leaves and tear or thinly slice them for tossing through the salad. Otherwise leave them out.

    Uses 6 basil leaves, optional

  4. Step 4: Put all the cut cucumber pieces into a serving bowl and toss evenly with the measured half teaspoon salt.

Uses All prepared cucumber pieces · ½ tsp salt

  5. Step 5: Toss the salted cucumber with all the measured sesame oil (2 tsp), seasoned rice vinegar (2 tbsp) and red chilli flakes (½ tsp), adding the prepared basil only if selected. Sprinkle on the optional already toasted sesame seeds if wanted and serve as a side salad.

Uses All salted cucumber pieces · All prepared basil, only if selected · 2 tsp sesame oil · 2 tbsp seasoned rice vinegar · ½ tsp red chilli flakes · 2 tsp already toasted sesame seeds, optional
