Step 1: Use pork tocino that has already been prepared and cured, ready for cooking. Before heating the pan, wash and chop the tomato and hold it separately. Pour the measured cup of cooking water into a pan or cooking pot and bring it to a boil.
Step 2: Carefully add all the oil (3 tbsp) and uncooked prepared pork tocino to the boiling water. Cook over medium heat until the cooking water has completely evaporated, turning the pork as needed.
Step 3: Once the water has evaporated, fry the pork in the remaining oil until browned, turning to brown the opposite side. Watch closely so the sweet coating does not burn. Cook the pork through, reaching at least 63°C / 145°F in its centre.
Step 4: Lift the cooked pork from the pan onto a clean plate and let it rest for at least 3 minutes before serving. Peel the ready-cooked salted duck egg (1) and cut it into pieces. Arrange the egg and held chopped tomato alongside the rested pork.
Step 5: Serve the tocino, salted egg and tomato with ready steamed white rice and prepared spicy vinegar dip if wanted.
Step 6: Share between three portions and enjoy while warm.
