Step 1: Cut the 300 g steak into bite-sized pieces. Separately trim and slice the 4 cooking green onion stalks, keeping their white and green parts apart for the two later pan stages.
Step 2: Coat all the earlier cut steak with 2 tbsp soy sauce, 1 tbsp oyster sauce, 2 tsp sesame oil and 1 tsp black pepper. Add the optional ½ tsp baking soda if using. Keep the marinated raw steak covered in the refrigerator while preparing the rice; no fixed marinade time is supplied.
Step 3: Separate the same 3 eggs. Reserve all the whites in a bowl and beat them for the later scramble. Mix all three yolks, 1½ tsp Shaoxing wine and the separate salt and rice pepper to taste into the 3 cups ready cooked jasmine rice, until every grain is coated. Keep the reserved whites separate; the raw-yolk rice still needs cooking.
Step 4: Heat 1 tbsp, exactly half of the divided cooking-oil supply, in a pan over medium-high heat. Add all the earlier marinated steak.
Step 5: Pan-fry the steak for about 4 minutes, turning to brown each side. Check the thickest pieces reach at least 63°C / 145°F and continue cooking if needed. Remove the cooked steak to a clean plate.
Step 6: Let the cooked steak rest off the heat for at least 3 minutes while starting the aromatic and rice stages. Return it to the pan only after that rest.
Step 7: Add the remaining 1 tbsp cooking oil to the same pan. Add all 4 minced garlic cloves, the diced shallot (1), the earlier white parts from the 4 cooking green onions, and any selected mixed vegetables.
Step 8: Stir-fry the earlier aromatics and optional vegetables until fragrant and the vegetables soften. Pour in all the reserved beaten whites from the same 3 separated eggs and scramble until the whites are fully set.
Step 9: Add all the earlier yolk-coated rice to the cooked aromatic-and-egg-white mixture. Stir-fry over high heat for about 3 minutes, breaking up clumps, until the yolk coating is fully cooked and the rice is steaming hot throughout. For chilled cooked rice, check at least 74°C / 165°F and continue heating if necessary.
Step 10: After the steak has rested for at least 3 minutes, return it to the fried-rice mixture. Add all the earlier green parts from the same 4 cooking green onion stalks. Toss over high heat for another 2 minutes until everything is evenly combined and hot.
Step 11: Plate all the finished steak fried rice as 3 portions. Garnish with the separate unmeasured sliced spring onion and, if desired, ready fried shallots and sesame seeds. Serve hot.
