Step 1: Before heating the wok, cut the fresh ready rice noodles (1 lb) into 1½-inch-wide pieces and bring only the cooking portion to room temperature. Wash the cabbage, sprouts and scallions (2); cut the cabbage crosswise into ½-inch pieces and the scallions diagonally into 2-inch pieces, keeping whites and greens separate. Slice the ginger and fresh mushrooms and mince the garlic so all additions are ready.
Step 2: Mix the thinly sliced flank steak (12 oz) with the optional ¼ tsp baking soda, 1 tsp marinade soy sauce, 1 tbsp marinade water, 1 tsp vegetable oil and ½ tsp marinade cornstarch. Mix until well coated and the liquid is absorbed. Refrigerate for 30 minutes, and prepare the sauce and slurry during that wait.
Step 3: Combine the 2 cups warmed ready chicken stock, 1 tbsp light soy sauce, 2 tsp dark soy sauce, 2 tbsp oyster sauce, ¼ tsp sugar, ¼ tsp sesame oil and white pepper to taste in a sauce bowl. Keep this sauce separate from the beef marinade.
Step 4: Mix the 2 tbsp finishing cornstarch with its separate 2 tbsp cold water until smooth. Keep this slurry separate from the sauce; stir it again before each addition.
Step 6: Turn the beef and sear its second face for about 30 seconds. Lift the partially cooked beef into a clean holding bowl, leaving the wok ready for the vegetables. Continue the recipe immediately; the beef finishes cooking when it returns to the noodles.
Step 7: Reduce the heat to medium. Add the remaining 1 tbsp canola oil and all three thin ginger slices to the wok. Cook for about 20 seconds until fragrant and lightly caramelized, watching closely.
Step 12: Return the held beef promptly and add all washed bean sprouts. Fold over the heat until the sprouts are thoroughly cooked and hot through and the beef is fully cooked, reaching at least 63°C / 145°F. Add the prepared scallion greens and fold them through. Keep the wok hot for the sauce-thickening steps; no raw sprout side is served.
Step 13: Stir the slurry again and drizzle in half while stirring the noodles. Cook at a simmer for 20 seconds, then check whether the sauce coats a spoon.
Step 14: If needed, stir and add some of the remaining slurry gradually until the sauce coats a spoon. If you prefer more sauce or it becomes too thick, add a little warmed extra ready stock. Keep the additions small and check the consistency; unused slurry does not have to go into the dish.
Step 15: After the final slurry addition, simmer and stir for at least 20 seconds so the starch cooks through. If no extra slurry was needed, keep the noodles hot while checking the final coating and fully cooked beef and sprouts.
Step 16: Keep the finished noodles hot and allow at least 3 minutes after the beef reaches 63°C / 145°F before serving.
