  1. Step 1: Take a small bowl and add 1 tbsp wasabi paste, 2 tbsp Japanese soy sauce (koikuchi shoyu), 2 tbsp sake, 2 tbsp mirin, 2 tsp sugar and 1 tsp honey. Mix until well combined and set it by the stove ready for later.

Uses 1 tbsp wasabi paste · 2 tbsp Japanese soy sauce (koikuchi shoyu) · 2 tbsp sake · 2 tbsp mirin · 2 tsp sugar · 1 tsp honey

  2. Step 2: Cut 450 g beef steak into bitesize pieces and place them in a bowl. Sprinkle with 1 pinch salt and pepper and mix until evenly distributed. Start heating a frying pan on high.

Uses 450 g beef steak (approx 2 cm thick) · 1 pinch salt and pepper

  3. Step 3: Add ½ tbsp potato starch (katakuriko) to the beef and mix until lightly coated all over.

Uses Bite-sized seasoned steak · ½ tbsp potato starch (katakuriko)

  4. Step 4: Once the pan is hot, add ½ tbsp cooking oil and swirl around before adding the beef and searing on one side.

Uses Starch-coated seasoned steak · ½ tbsp cooking oil

  5. Step 5: Once the first side is browned, add the prepared wasabi-teriyaki sauce and stir-fry until the sauce is slightly thickened and glossy and the thickest steak pieces reach 145°F (63°C). Continue cooking as needed; a glossy sauce alone does not establish doneness. Turn off the heat and let the cooked steak rest at least 3 minutes.
