Method8 steps
Step 1: Wash and cut the tofu according to your liking (I usually cut it in squares, around 3×3 cm)
Step 2: Blend the garlic (4 cloves) into a fine paste. If using turmeric (3 cm), blend in either 3 cm fresh turmeric OR 1 tsp turmeric powder; omit both if you prefer no turmeric.
Step 3: Put the tofu, blended seasoning, white pepper and salt to taste (to taste) into a small pot. Add mushroom stock powder (1 tsp) if desired.
Step 4: Add some water until the tofu surface is all covered.
Step 5: Boil the tofu over medium high heat for around 15 minutes.
Step 6: Drain the boiled tofu, let it cool and dry its surface thoroughly before frying.
Step 7: Just before serving, deep-fry the tofu until golden, around 4 minutes per side. Turn as needed and use the timer for each side.
Step 8: Serve immediately.
