Method9 steps · about 25 min
Step 1: Preheat the oven to 180°C / 350°F. Have the garlic crushed, onion finely diced, mushrooms finely chopped and pepperoni sliced before filling the cups.
Step 2: Cut one round from each fresh bread slice using a round cutter about the diameter of an 800 g tomato can. If using a clean empty can, use an undamaged, smooth rim carefully. Alternatively, cut off the crusts and use the squares. Keep the bread offcuts for another use.
Step 3: Gently mould each cut bread piece into a muffin-tin cup. Use fresh, pliable bread so the cups hold together.
Step 4: Put all the butter (2 tbsp), crushed garlic and salt (⅛ tsp) in a microwave-safe bowl or mug. Microwave in 30-second bursts, checking after each, until the butter has melted.
Step 5: Brush all the bread cups with the melted garlic butter, distributing the crushed garlic as well as the butter.
Step 6: Divide all the pizza sauce between the twelve cups. Top with all the finely diced red onion (¼ cup) and chopped mushrooms (⅓ cup), divided evenly.
Step 7: Divide the grated cheese between the cups, then top with all the sliced pepperoni (¼ cup).
Step 8: Bake at 180°C / 350°F for 10–15 minutes, checking from 10 minutes, until the cheese has melted and the bread edges are golden.
Step 9: Lift the mini pizzas carefully from the tin and serve warm. Makes twelve mini pizzas.
