Step 1: Prepare cleaned, deveined prawns with their heads intact. Drain and keep refrigerated while preparing the other ingredients; pat thoroughly dry before frying.
Step 2: Heat enough vegetable oil in a frying pan over medium heat and fry the prawns in batches, around 2 minutes per side, until the flesh is pearly white and opaque. Use the timer for each side of each batch. Set the cooked prawns aside.
Step 3: In a clean wok, heat 1 tbsp vegetable oil and butter (2 tbsp) over medium heat, and then add the sliced onions (1). Saute until the onions are translucent (about 5 minutes).
Step 4: Add garlic (4 cloves) and ginger (1 slice), saute until fragrant (around 3 minutes).
Step 5: Add white pepper, salt to taste (to taste), 2 tbsp water, Worcestershire sauce (1 tbsp) and oyster sauce (2 tbsp). Mix for around 3 minutes, until the sauce thickens, then turn off the heat.
Step 6: Add the fried prawns and mix it with the sauce until well combined.
Step 7: Transfer to a serving plate, garnish with chopped spring onions (1 tbsp).
