Step 1: If you want sweeter sangria, make the syrup: dissolve the 38 g sugar (3 tbsp) in 45 ml water (3 tbsp) over medium heat. Take off the heat and let it cool, then keep it chilled until you are ready to add it. Skip this stage for unsweetened sangria.
Step 2: Wash the two oranges and one lemon under clean running water. Cut off thick pieces of rind and save them, then juice the fruit. Keep the juice and rinds separate for the next stages.
Step 3: Pour the 1½ bottles of red wine and all the orange and lemon juice into a large pitcher. Stir in the 2 oz brandy if using.
Step 4: If using the syrup, add a little of the cooled batch at a time and taste until the sangria is sweet enough; set unused syrup aside. Add the cinnamon stick (1) and saved citrus rind. If using the green apple (1) or peaches (2), wash them under clean running water, remove the apple core or peach stones, cut into chunks and add them now.
Step 5: Cover the pitcher and refrigerate at 4°C or colder for at least 2 hours, preferably overnight, to let the citrus and cinnamon flavour the wine.
Step 6: Divide the cold sangria among six glasses over ice. Add a little carbonated water to each glass just before drinking if desired.
Step 7: Keep leftover sangria covered at 4°C or colder for no more than 2 days. Add ice and any carbonated water only when you serve it.
