Step 1: Peel all three ripe medium bananas and mash them together with a fork in a bowl until soft and a little watery.
Step 2: Stir the light brown sugar (3 tbsp), vanilla extract (1 tsp), ground cinnamon (½ tsp), ground nutmeg (¼ tsp) and pinch of salt into the mashed bananas. Sift in all the flour and stir until fully combined into a batter that flows easily off a spoon.
Step 3: Heat about a quarter cup of cooking oil in a 25 cm / 10-inch non-stick frying pan over medium-high heat. Once the oil is hot, drop the prepared banana batter into it by the spoonful, leaving space between fritters. Cook in batches if needed. Keep the rest of the prepared batter in its bowl for the following batches.
Step 4: Fry until the undersides are golden and bubbles appear on top, about two minutes. Flip and cook the second side for about two minutes, until browned and cooked through in the centre with no raw flour batter. These fritters should be thin and moist. Repeat for each batch; the timer is for about four minutes of frying one batch, turning halfway.
Step 5: Lift the cooked fritters out of the oil and drain them on paper towels or a cooling rack. Serve warm as four portions.
