Method9 steps · about 45 min

  1. Step 1: Preheat oven to 325 F (165 C). Line 2 baking pans with parchment paper.

  2. Step 2: Place oats in a large mixing bowl.

Uses 5 ½ cup rolled oats (use quick oats for lighter, crispier granola)

  3. Step 3: To a small pot, add oil (½ cup), honey, sugar (1/3 cup), salt (½ tsp), cinnamon (¾ tsp), and vanilla (¾ tsp). Bring to boil over medium heat, just until the sugar is dissolved.

Uses ½ tsp salt · 1/3 cup brown sugar · ½ cup honey or maple syrup (I use honey) · ½ cup vegetable oil · ¾ tsp cinnamon · ¾ tsp vanilla

  4. Step 4: Pour the honey mixture over oats and stir to coat well.

Uses five and a half cups rolled oats ready for coating · oil honey or maple brown sugar salt cinnamon and vanilla heated just to dissolve sugar

  5. Step 5: Spread evenly onto baking sheets, keep the center of the baking pan empty to make for more even baking.

Uses oats evenly coated with the hot syrup

  6. Step 6: Bake the trays at 325°F (165°C) for 10 minutes, then take them out to stir the oats.

First granola bake · 10 minUses coated oats spread evenly over two trays with centres kept clear for even baking

  7. Step 7: After stirring, bake another 10 minutes. The oats should look slightly darker; give them a few more minutes if they are not browned enough. Cool completely until crispy before adding the trail mix.

Second granola bake · 10 minUses oats baked for the first ten minutes before stirring

  8. Step 8: Stir in trail mix when cooled.

Uses 3 cups nuts and dried fruit mix of your choice · oats browned after second bake and cooled until crispy

  9. Step 9: Store in airtight container. If you made a lot, consider keeping some in the fridge to prevent the nuts from going rancid. Enjoy!
