Step 1: Cut the chicken (1 kg) into small pieces and set aside; do not wash raw chicken.
Step 2: In a large cooking pan, put the chicken, water (2 l), bay leaves, kaffir lime leaves (3), celery (2 stalks), cinnamon (4 cm) and cloves (4).
Step 3: Heat the pan over medium high heat.
Step 4: While waiting for the soup to boil, using mortar and pestle (or a blender), pound the garlic (5 cloves) and ginger (3 cm) into a smooth paste.
Step 5: In another pan, heat the vegetable oil (2 tbsp) over medium heat and saute the ginger-garlic paste until fragrant, around 3 minutes.
Step 6: Add the fried ginger-garlic paste to the heating soup.
Step 7: When the soup is boiling, reduce the heat to a low flame.
Step 8: Add the salt (to taste), sugar (1 pinch), white pepper powder (¼ tsp) and ground nutmeg (¼ tsp).
Step 9: Adjust the seasoning if necessary.
Step 10: Simmer for about 30 minutes, until the chicken is cooked through and reaches 74°C (165°F) in its thickest part.
Step 11: Serve the soup with Sambal Soto/Sop, lime wedges, cut celery and fried shallots or onions.
