Step 1: Put 1 tbsp butter in a 9-inch cast-iron skillet and place the skillet in the oven.
Step 2: Preheat the oven with the skillet inside to 375°F / 190°C, allowing the skillet butter to melt.
Step 3: Whisk together 1½ cups all-purpose flour, 1 cup plain yellow cornmeal, 1 tbsp baking powder and 1 tsp salt. Add the optional ½ cup sugar if using.
Step 4: Make a well in the center of the dry mixture.
Step 5: In a separate bowl, combine 1¼ cups buttermilk, 2 beaten eggs, 1 cup vegetable oil and 3 tbsp melted butter-flavored shortening.
Step 6: Pour the wet mixture into the dry mixture and stir just until combined; avoid overmixing.
Step 7: Carefully remove the hot skillet from the preheated oven.
Step 8: Pour the cornbread batter into the hot buttered skillet.
Step 9: Smooth the batter evenly in the skillet.
Step 10: Bake for 20–25 minutes, until golden and a tester from the center has no wet batter.
