Method7 steps
Step 1: Preheat the oven to 375°F (about 191°C). Have the ready unbaked pie crust in its pie dish.
Step 2: Mix both sugars (½ cup) with all the melted butter (3 tbsp) in a large bowl. Stir in all the corn syrup, lightly beaten eggs (3) and measured 2 tbsp oloroso sherry.
Step 3: Put all the pecans (2 cups) into the ready unbaked pie crust (1). Spread them evenly and press them lightly into the dough.
Step 4: Pour all the sugar, butter, syrup, egg and sherry mixture over the pecans in the crust.
Step 5: Bake the assembled pie for 10 minutes at 375°F (about 191°C), then reduce the oven to 350°F (about 177°C).
Step 6: Continue baking at 350°F (about 177°C) for another 30–45 minutes, checking for doneness at 30 minutes. The center should be set with only a slight jiggle and reach at least 71°C/160°F. Check the edges during baking and shield them with foil if they become too dark.
Step 7: Cool the baked pie completely so the filling sets before cutting it into eight slices. Refrigerate within 2 hours of leaving the oven and finish cooling in the refrigerator if needed. Offer the optional additional oloroso sherry alongside when serving.
