Method2 steps · about 5 hr 10 min
Step 1: Put the pork shoulder (6 pounds), bay leaf (1), red pepper flakes (1 teaspoon) and water (4 cups) in a large covered pot. Bring to a boil, then simmer covered for 4 to 5 hours until tender. Let the pork cool enough to handle in the broth. Remove and discard the bay leaf, skim excess fat from the broth and shred the meat.
Step 2: Bring 3 cups reserved cooking broth to a boil. Stir in the vinegar (1 cup), sugar (⅓ cup), ketchup (3 tablespoons), Worcestershire sauce (1 tablespoon), dry mustard (1 teaspoon) and pressed garlic (1 clove). Add the shredded pork, season with salt (to taste) to taste and heat through uncovered.
