Step 1: Peel the medium onion (1 medium) and chop it finely.
Step 2: Cut all 340 g ready-cooked smoked kiełbasa into rounds about ½ inch thick. Keep an edible natural casing; remove any inedible casing as directed on the package.
Step 3: Heat all two tablespoons clarified butter in a deep frying pan, at least 10 cm deep, or a large cooking pot over medium heat.
Step 4: Add all the chopped onion and sliced cooked sausage to the hot fat. Brown them over medium heat, stirring as needed.
Step 5: Peel the garlic clove (1) and crush it carefully with the flat of a knife. Stir it into the browned onion and sausage.
Step 6: Add all the tablespoon dried lovage (1 tbsp) and cook for about one minute until fragrant, stirring constantly.
Step 7: Add the complete can of diced tomatoes and its juices, all four cups chicken stock and all 340 g dry pasta to the fragrant sausage mixture. Stir well and cover the pan.
Step 8: Reduce the heat to medium-low and simmer, covered, for about 10–12 minutes until the pasta is al dente and the stock is absorbed. Stir once halfway through and check that the pasta on the bottom is not sticking. Continue cooking as needed for the chosen pasta.
Step 9: Once the pasta is cooked, stir in the handful of fresh cherry tomatoes, left whole or cut in half.
Step 10: Turn off the heat. Stir all the two-thirds cup grated hard cheese (⅔ cup) into the cooked pasta and cherry tomatoes until combined.
Step 11: Stir in the half teaspoon ground black pepper and taste the finished dish. Add only as much of the optional half teaspoon salt as it needs; the cooked sausage and cheese may already season it sufficiently.
Step 12: Divide the complete dish into four portions, add the optional fresh herb garnish and serve immediately.
