Method7 steps · about 20 min
Step 1: Set out the measured frozen sweetcorn while preparing the other ingredients so it begins to thaw. Trim and slice the spring onions (4).
Step 2: Wash and trim the courgette (150 g) and grate coarsely. Squeeze out as much moisture as possible over a sieve, then leave on kitchen paper to absorb remaining moisture.
Step 3: Mix the sweetcorn (120 g), prepared drained grated courgette and sliced spring onions with the flour (100 g), baking powder (¼ tsp), beaten eggs (2), salt (1 tsp) and pepper (½ tsp) to form a thick batter.
Step 4: Heat the oil (2 tbsp) in a frying pan over a medium heat.
Step 5: Drop level scoops of the prepared fritter batter into the hot oil, cooking in batches if needed.
Step 6: Flatten the portions evenly to about 1.5 cm (⅝ inch) thick. Cook the first side for about 3–4 minutes until golden, leaving undisturbed for at least 2 minutes before checking.
Step 7: Turn the first-side cooked fritters and cook the second side for about 3 minutes until golden and set throughout. Repeat with remaining batter as needed and serve.
