Method5 steps · about 15 min

  1. Step 1: Peel and devein the shrimp (5 oz). Halve large shrimp horizontally if desired. Rinse briefly in separate preparation water, drain and pat thoroughly dry. Mix with the separate 1/2 tsp shrimp-marinade salt and 1/2 tsp white pepper, then add 1 tsp cornstarch.

Uses 5 oz shrimp · Water for rinsing peeled shrimp, as needed · 1/2 tsp salt · 1/2 tsp white pepper · 1 tsp cornstarch

  2. Step 2: Clean the knife and board used for raw shrimp before chopping the small amount of green onion. Crack the five eggs into a bowl and add the separate 1 tsp egg-mixture oil, 1/2 tsp egg-mixture salt and 1/2 tsp sugar. Just before cooking, beat thoroughly until homogeneous and aerated, then mix in the chopped green onion.

    Uses 5 eggs · A small amount of green onion · 1 tsp oil · 1/2 tsp salt · 1/2 tsp sugar

  3. Step 3: Heat a suitable wok on high for about 1 minute. Add a portion of the 2 tbsp wok oil, leaving the remainder for the next egg-cooking stage, and swirl to coat. Stir-fry the marinated shrimp for about 30 seconds, until mostly cooked and nearly all orange. Turn off the heat and transfer directly into the prepared beaten-egg mixture; continue cooking immediately.

Uses Marinated shrimp · A portion of the 2 tbsp wok-oil supply; reserve the rest · Prepared beaten egg and green-onion mixture

  4. Step 4: Return the wok to high heat and add the remaining oil from the same 2 tbsp supply. Pour in the shrimp-and-egg mixture. Leave the bottom layer to set for about 10 seconds, then fold it over so uncooked egg flows underneath. Continue setting and stacking layers for about 30 seconds. Turn off the heat and continue folding with residual heat, reheating briefly if needed, until the eggs are set and the mixture reaches 71°C/160°F, with shrimp firm, pearly and opaque.

Uses Shrimp and prepared egg mixture · Remaining oil from the same 2 tbsp wok-oil supply

  5. Step 5: As soon as the eggs and shrimp reach the stated cooking endpoints, transfer immediately to a serving plate and enjoy.
