Step 1: Sift all the dry ingredients together in a bowl and combine.
Step 4: Gently fold the ingredients together with a wooden spatula until combined. Avoid excessive stirring, as directed in the article for this gluten-free version.
Step 5: Place three food-safe pancake rings, approximately 10 cm in diameter and 4 cm high, lined with baking paper, in a frying pan over very low heat. Divide the batter equally among them.
Step 6: Place a lid on the frying pan and leave it for 20 minutes.
Step 7: When small bubbles appear and the edges have started to set, carefully flip the hot rings and pancakes using spatulas and heat-protective gloves.
Step 8: Place the lid over the top again and cook for another 20 minutes on the other side.
Step 9: Remove the cooked pancakes from the heat and carefully release them from the hot rings and baking paper.
Step 10: Serve the pancakes with your favourite toppings (e.g butter, syrup, ice-cream, etc.).
