Cucumber Radish Salsa
From the zcook collection
This Cucumber Radish Salsa is a great example of how easy it can be to build salsas that don't rely on tomatoes or tomatillos. A light, vibrant salsa that works great on tacos, tostadas, and even pita bread.

Method6 steps · about 10 min
Step 1: Rinse the English cucumber (1), radishes (1/2 lb.), 1/2 serrano and cilantro under cold water.
Step 2: Trim the rinsed vegetables and discard the thick lower cilantro stems, keeping the tender upper stems. Chop the 1 English cucumber, 1/2 lb radishes, 1/2 serrano and 1/2 bunch cilantro from step 1, plus the 1/4 onion and peeled 1 garlic clove. Put them in a mixing bowl.
Step 3: Add the juice of 1 lime, 1/4 tsp salt and cracked black pepper (to taste) to the chopped salsa from step 2. Mix well.
Step 4: Taste the seasoned salsa from step 3. Add a little extra salt (to taste) or lime juice if needed. For more heat, finely chop and add some or all of the optional extra half serrano, only as needed.
Step 5: Leave the adjusted salsa from step 4 chunky, or chop it more finely if you prefer a more uniform salsa texture.
Step 6: Serve the finished cucumber-radish salsa from step 5 immediately. Refrigerate leftovers in an airtight container.
