Step 1: Slice the Gruyere about 1 cm (0.4 inch) thick. Lay out four of the eight chicken slices (500 g) and reserve the remaining four as tops. Divide the cooked ham (80 g) and cheese among the four bottom slices, keeping the filling away from the edges.
Step 2: Cover each filled bottom with a reserved chicken slice. Press the edges together so the filling stays enclosed, then coat each assembled cordon bleu in flour.
Step 3: Beat the two eggs. Dip the floured cordon bleu into the beaten eggs and then coat with breadcrumbs (to taste) to make four pieces.
Step 4: Brush the coated cordon bleu lightly with olive oil and place in the air fryer basket. Cook at 195°C (383°F) for 16 minutes, turning halfway through, until the chicken reaches 74°C (165°F) in the center.
Step 5: Transfer the cooked cordon bleu to plates, season with salt to taste (to taste) and serve immediately.
