Method5 steps
Step 1: Preheat the oven to 180°C (350°F). Have the vegetables cut as listed and the pine nuts dry roasted for serving.
Step 2: Toss all the red onion (1), carrot (1), zucchini (1), pumpkin (¼), cauliflower and beetroot (1) with the two tablespoons olive oil, vegetable salt (1 tsp) and black pepper. Spread on a baking tray and roast for about 30–40 minutes, checking from 30 minutes, until the vegetables are tender and lightly browned. Continue as needed for their size.
Step 3: While the vegetables roast, mix the tahini (3 tbsp), lemon juice (3 tbsp), minced garlic (1 small), sauce salt (½ tsp) and sauce black pepper until smooth. Add water gradually until the sauce has a honey-like pouring consistency.
Step 4: Pile the tender roasted vegetables from step 2 onto a serving plate. Sprinkle with all the za’atar, drizzle with tahini sauce from step 3, then scatter over the dry roasted pine nuts (2 tbsp) and chopped cilantro.
Step 5: Serve the dressed vegetables from step 4 with the ready pita wedges, as 2 light meals or 4 side portions. Keep any remaining tahini sauce from step 3 refrigerated.
