  1. Step 1: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

Uses cooking oil as needed for baking dish

  2. Step 2: In a small bowl, combine the cheese, onion (1), and black olives. Reserve some of this mixture for the final topping.

Uses 2 cups shredded Cheddar and Monterey cheese blend · 1 onion, chopped · 1 (2 ounce) can sliced black olives

  3. Step 3: Working one tortilla at a time, heat enough oil in a small skillet to lightly coat it, and cook until soft. Remove and dip in enchilada sauce to coat. Repeat as needed while filling the enchiladas.

Uses 24 (6 inch) corn tortillas · some enchilada sauce for dipping tortillas; reserve rest for layers · cooking oil as needed to soften tortillas

  4. Step 4: Add some turkey and cheese mixture to the center of each softened tortilla, roll and place in the prepared dish. Repeat softening and filling until the bottom layer is covered, reserving turkey and cheese mixture for the second layer and some cheese mixture for topping. Spread enough enchilada sauce over the bottom layer to cover.

Uses some enchilada sauce to cover first layer · some cooked turkey for first layer; reserve remainder · cheese-onion-olive filling · softened sauce-coated corn tortillas

  5. Step 5: Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

Uses remaining enchilada sauce · remaining cooked turkey for second layer · remaining cheese mixture for second layer and topping · remaining softened sauce-coated tortillas · assembled bottom layer
