Method6 steps · about 3 hr 30 min

  1. Step 1: Sprinkle 2 tsp gelatin onto the ¼ cup cold water. If you want a firmer pudding for unmolding, add the optional extra ½ tsp gelatin now. Let it sit about 10 minutes until the water is absorbed.

Uses ¼ cup cold water · 2 tsp gelatin powder (I use Knox brand), for a firmer pudding that can be easily unmolded, use 1/2 tsp more · 0.5 tsp gelatin powder

  2. Step 2: Meanwhile blend mango and 2 Tbsp of honey until smooth (you can strain it if you want to ensure smoothness) and transfer to a small pot. Add the cream and cook over medium heat, stirring constantly, until it is steaming. Once steaming, turn off the heat.

Uses 300 g mango flesh · 2 tbsp honey initially · ⅓ cup whipping cream or coconut milk, plus extra for serving

  3. Step 3: Pour hot off-the-boil water (⅓ cup) into the bloomed gelatin and stir to completely dissolve; pour this into the mango mixture and stir to mix well.

Uses ⅓ cup hot off-the-boil water · two teaspoons gelatin, plus optional half teaspoon for unmolding, bloomed in quarter cup cold water · 300 g mango puree heated with initial honey and chosen cream or coconut milk

  4. Step 4: Taste the mixture and add more honey and/or lemon juice as needed.

Uses up to 2 tbsp remaining honey, only if needed · Lime or lemon juice, as needed (depending on the mango) · bloomed gelatin dissolved with third cup hot water and stirred into the mango cream base

  5. Step 5: Dice the extra mango and stir part into the pudding mixture, reserving some for garnish. Pour into molds. Refrigerate at least 3 hours until cold and set; for unmolding, allow 8 hours if possible for maximum firmness.

Chill mango pudding in cups · 180 minUses part of the extra diced mango folded into pudding, reserving some for garnish · mango pudding adjusted with remaining honey and citrus only as needed

  6. Step 6: To serve pour some cream over the pudding, garnish with more mango cubes and mint leaves, enjoy!

Uses reserved diced mango for garnish · mint leaves · extra cream or coconut milk for serving · pudding with diced mango set and cold after at least three hours, or preferably eight hours if unmolding
