Step 2: Cut all 150 g ready-to-eat smoked salmon into bite-sized pieces. Wash the orange and grate all its colored zest over the salmon, avoiding the white pith. Squeeze the orange, measure 1 tbsp of its juice into the bowl, and reserve the rest for another use. Add the ½ tsp dried oregano, toss gently and marinate in the refrigerator for 15 minutes.
Step 4: Take the egg-cream-cheese mixture from step 1 out of the refrigerator. Lift the hot al dente spaghetti from step 3 out of its cooking water with tongs and transfer it directly to the bowl. Toss immediately and thoroughly, off the heat, until the warm sauce coats the pasta.
Step 5: Add all the marinated salmon from step 2, including the zest, oregano and tablespoon of juice left in its bowl, to the coated pasta from step 4. Toss gently to distribute the salmon. Taste and add more salt only if needed.
Step 6: Divide the completed salmon carbonara from step 5 between 4 plates and serve immediately while warm. Add extra fresh oregano sprigs if desired.
