Method10 steps · about 1 hr 20 min
Step 1: Steam the chicken (500 g) for about twenty-five minutes until cooked through; check 74°C (165°F) in the thickest part. Let it cool enough to handle, then shred and set aside.
Step 2: Choose the curly red chillies (5) or large red chillies (5 large). Blend the chosen chillies with bird-eye chillies, shallots (7), garlic (3 cloves), lesser galangal (3 cm) and shrimp paste into a paste.
Step 3: Choose four tablespoons coconut oil or vegetable oil (4 tablespoons). Heat the chosen oil in a wok over medium-high heat.
Step 4: Add the spice paste, lemongrass (2 stalks) and kaffir lime leaves (5), saute until fragrant, around 5 minutes.
Step 5: Add salt (to taste).
Step 6: Add the shredded chicken, stir to mix with the spices.
Step 7: Add water (0.5 cup).
Step 8: Lower the heat to medium flame and continue cooking until the liquids have evaporated, about 15 minutes.
Step 9: Sprinkle the lime juice and toss the spiced shredded chicken.
Step 10: Transfer the dish to a serving plate.
