Step 1: Using a food processor, blend the shallots (4), garlic (3 cloves), candlenuts (5), and coriander seeds (0.5 tbsp) into a fine paste.
Step 2: Heat the cooking oil (3 tbsp) in a wok over medium high heat.
Step 3: Sautee the spice paste until fragrant, around 3 minutes.
Step 4: Add the beef (300 g) and fry for about 5 minutes until the beef changes colour.
Step 5: Add the galangal (3 cm), bay leaves, kaffir lime leaves (3) and lemongrass (1).
Step 6: Add the water (1 l).
Step 7: Add white pepper and salt to taste (to taste), plus the sugar (0.5 tsp) if desired.
Step 8: Add the coconut milk (150 ml) and stir carefully.
Step 9: Add the tofu and eggs, stir the mixture and make sure that all the ingredients are coated in the coconut broth.
Step 10: Bring to a boil, then simmer over medium-low heat for about 45 minutes to 1 hour, until the beef is tender and the broth reduced. Stir regularly during simmering to keep the coconut broth smooth.
Step 11: Once the meat is tender and the broth reduced, give the stew a final gentle stir.
