Method7 steps
Step 1: Choose mint (About ¼ cup) OR the three knotted pandan leaves. Bring the syrup’s ¾ cup water, ¾ cup sugar and chosen aromatic to a boil, then simmer for 5 minutes. Turn off the heat, cover and steep for 30 minutes; use the timer for this covered steep. Strain out the leaves to obtain clear syrup.
Step 2: Grated route: optionally peel the cucumbers (2), then shred them with a box grater. If choosing the blender route, skip this step and steps 4–5; prepare the shared seeds in step 3, then use steps 6–7.
Step 3: For either route, stir 2 tbsp chia seeds, or the source basil-seed alternative, into the separate 1 cup drinking water. Set aside until the seeds swell and absorb the water.
Step 4: Grated route only: combine the grated cucumbers, juice from one lime with any seeds removed, prepared hydrated seeds and strained syrup.
Step 5: Grated route only: half-fill a glass with the prepared concentrate, then fill the rest with ice-cold drinking water OR club soda and ice. Stir and serve. Skip the blender steps 6–7.
Step 6: Blender route only: skip grated-cucumber (2) steps 2 and 4–5. Peel and chop the cucumbers, then blend them with juice from the lime (1) and the prepared strained syrup until smooth. Keep the seeds hydrated in shared step 3 for serving.
Step 7: Blender route only: half-fill each glass with the prepared puree. Add about 2 tbsp of the prepared hydrated seeds to each glass, then fill the rest with ice-cold drinking water OR club soda and ice. Stir and serve.
