Step 1: Grind the ¾ cup rolled oats finely. Mix with the rice flour (½ cup), semolina (0.25 cup), yogurt (0.5 cup), 1 tsp cumin seeds, the batter ginger (1 piece), green chilli (1), curry leaves, pepper (½ tsp), 2 tbsp coriander, half onion and 1 tsp salt. Stir in the 3 cups water to make a smooth, flowing batter.
Step 2: Rest the batter for 20 minutes. Meanwhile, make the bhaji: heat its 2 tsp oil and add the mustard seeds (1 tsp), ½ tsp cumin seeds, chana dal (1 tsp), urad dal (½ tsp), hing, dried red chilli (1) and bhaji curry leaves. Saute until the seeds splutter.
Step 3: Add the bhaji half onion, green chilli (1) and chopped 1-inch ginger (1 piece) piece. Saute well, then stir in ½ tsp turmeric and ½ tsp salt.
Step 4: Mix in the 3 boiled, mashed potatoes (3). Turn off the heat and stir in the bhaji 2 tbsp fresh coriander and the juice of half a lemon. Set aside.
Step 5: After the batter has rested for 20 minutes, stir and add more water if needed to restore a flowing consistency. Pour a portion thinly over a hot tawa.
Step 6: Sprinkle ½–1 tsp roasting oil over this dosa and cook until golden brown.
Step 7: Put 1 tbsp potato bhaji on the cooked dosa.
Step 8: Fold the dosa in half and serve immediately with coconut chutney if desired. Repeat with the remaining batter, roasting oil and bhaji for eight servings.
