Method7 steps · about 20 min
Step 1: Slice the 350 g raw flank or skirt steak into strips across the grain. Mix with the marinade’s 1 tsp cornstarch, 1 tsp Shaoxing wine, 1 tsp light soy sauce, 1 tsp sesame oil and 1 tsp julienned ginger. Leave to marinate for 10 minutes. Have the onion and red bell pepper julienned before starting the wok.
Step 2: While the beef marinates, mix the sauce: 3 tbsp oyster sauce, the separate 1 tsp light soy sauce, 1 tsp freshly ground black pepper, ¼ tsp sugar, 1 pinch salt, the separate 1 tsp cornstarch and 3 tbsp water. Set aside.
Step 3: Heat the 2 tbsp cooking oil in a wok over high heat. Sear the marinated beef until browned outside but still pink inside. Lift the beef onto a separate plate, leaving the cooking oil in the wok; it will finish cooking after the vegetables.
Step 4: Add the julienned onion (1) and half red bell pepper to the oil remaining in the wok. Stir-fry for about 1 minute.
Step 5: Return all the reserved seared beef to the wok. Stir-fry with the vegetables for another 1–2 minutes, checking at 1 minute and continuing until the beef is fully cooked.
Step 7: Add a little extra ground black pepper if desired. Serve the stir-fry hot, with ready steamed rice if using.
