  1. Step 1: Before handling the chicken (1 lb), wash and dry the lettuce and tomato (1), slice the tomato and red onion (1), and peel and grate the yellow onion (1). Set the toppings aside separately. In a medium bowl, mix the ground chicken, ¼ cup breadcrumbs, Greek yogurt (1 tbsp), grated yellow onion, Italian seasoning (1½ tsp) and Urfa biber (½ tsp). Season with kosher salt and black pepper and add about 1 tbsp olive oil. Mix well with clean hands or gloves, then wash your hands and clean surfaces that touched raw chicken.

Uses 1 lb ground chicken · ¼ cup dried breadcrumbs for the mixture · 1 tbsp Greek yogurt · 1 small yellow onion, grated · 1½ tsp ready Italian seasoning · ½ tsp Urfa biber · Kosher salt, to taste · Black pepper, to taste

  2. Step 2: Spread the remaining ¼ cup breadcrumbs on a plate. Divide the chicken mixture into four balls and gently roll each in the crumbs, then flatten to about ¾ inch thick. Discard any loose coating crumbs that touched raw chicken.

Uses All the chicken mixture from step 1, separate from the reserved toppings · Remaining ¼ cup breadcrumbs for coating

  3. Step 3: Brush a large cast-iron skillet or grill pan with about 2 tsp olive oil and heat over medium heat until shimmering. Arrange the four patties without touching. Cook the first face for 4–5 minutes, checking from 4 minutes, until browned.

First chicken-patty face; check at 4 minutes · 4 minUses All four coated patties from step 2, leaving discarded loose crumbs behind · About 2 tsp olive oil for the pan

  4. Step 4: Flip the patties and cook the second face for about 3 minutes, until golden. Check the thickest centre of every patty reaches 74°C (165°F), continuing cooking as needed; browning alone does not establish doneness.

Second chicken-patty face; check doneness · 3 minUses All four patties and their pan from step 3

  5. Step 5: Spread a thin layer of ready garlic aioli on the four buns. Add one fully cooked patty to each and top with the prepared lettuce, tomato and red onion. Serve immediately.

Uses All four fully cooked patties lifted from the pan in step 4 · The reserved clean toppings prepared in step 1 · 4 ready burger buns · Ready garlic aioli, enough for a thin layer on the buns
