Step 1: Grind saffron using a pestle and mortar. Sprinkle saffron over ice (3) and let it melt at room temperature. This will be your bloomed saffron.
Step 2: In a large bowl, mix yogurt, bell pepper, onion, garlic (2 cloves), olive oil (2 tbsp), lemon juice, salt (1 tsp), black pepper (1/2 tsp) and bloomed saffron. Add chicken wings (2 lb) to the mixture and using a pair of tongs, move the wings around so they're all covered with the marinade. Cover the bowl and refrigerate for 2 hours up to overnight to marinate.
Step 3: Near the end of the refrigerated marinating time, prepare the outdoor charcoal grill with all coals on one half and the other half empty, creating direct and indirect heat zones. Heating takes about 20–25 minutes. Keep the chicken refrigerated until the grill is ready.
Step 4: When the grill is ready, lift wings out with tongs and shake off excess marinade and vegetable chunks. Discard the remaining raw marinade. Grill over indirect heat about 12–15 minutes, turning halfway through; continue immediately to the direct-heat finish. Use a clean plate and utensils for cooked wings.
Step 5: Transfer the partly grilled wings to the direct-heat side and cook about 5 minutes, turning to char all sides. Continue as needed until the thickest meat away from bone reaches 74°C/165°F.
Step 6: Serve immediately with your favorite side dish.
