  1. Step 1: Peel, deseed and shred the green papaya (1) with a suitable peeler, mandoline or box grater. Use the mandoline’s guard and handle its blade carefully.

Uses 1 green papaya (~2 pounds, shredded)

  2. Step 2: Toss shredded papaya with basil.

Uses Thai basil (cut into strips) · one approximately two-pound unripe papaya peeled, seeded and shredded

  3. Step 3: Mix the soy sauce (0.5 cup), sugar (3/4 cup), vinegar (3/4 cup), water (1 cup) and sliced garlic (5 clove) until the sugar dissolves. Add optional sriracha, chile paste or sliced bird’s-eye chiles to taste.

Uses 0.5 cup soy sauce · 3/4 cup sugar · 3/4 cup vinegar · 1 cup water · 5 clove garlic · sriracha (chili paste, or sliced bird's eye chiles (optional))

  4. Step 4: Top with beef jerky (1/3 pound) strips and dressing, to taste.

Uses 1/3 pound beef jerky · shredded green papaya tossed with Thai basil · soy sauce, sugar, vinegar, water and sliced garlic mixed until sugar dissolves, optional chile

  5. Step 5: Serve the dressed salad promptly while the shredded green papaya is crisp.

Uses salad topped with thin jerky strips and only as much dressing as desired
