Step 1: Wash and drain snake beans. Chop off and discard the stalk ends, then cut the beans into 1/2 inch sections.
Step 2: Heat a wok over medium-high heat. Once the wok feels hot, add oil (3 tablespoon) and swirl to coat the pan.
Step 3: Add minced garlic (4 cloves) and sauté for 30 seconds, or until the color turns golden brown.
Step 4: Add chopped snake beans and cook for 1 minute, stirring often.
Step 5: Push the beans to one side and pour the beaten eggs (4) into the empty area. Stir into scrambled eggs and let them set.
Step 6: Mix the beans and scrambled eggs. Add ½ cup cooking water, fish sauce (2 teaspoon), sugar (1/2 teaspoon), salt (1/2 teaspoon) to taste and white pepper (1/2 teaspoon). Stir and cook until the water evaporates, beans are tender and eggs fully set.
Step 7: Turn off the heat, transfer the dish to a serving plate, and serve immediately with steamed rice.
