Step 1: Mix the minced lamb (200 g) with the coriander, black pepper, white pepper and salt to taste (to taste). Keep chilled while preparing the other ingredients.
Step 2: Meanwhile, prepare the other ingredients and boil the macaroni (500 g) in water until cooked according to its package, then drain. Preheat the oven to 150°C for the later baking stage.
Step 3: Prepare the batter by adding the milk (100 ml) slowly to the flour, until smooth. Add the egg (1), pepper and salt, and beat. Set aside.
Step 4: In a pan, add the olive oil (3 tbsp) and heat over medium low heat. Add the onions and fry until golden, about 10 min.
Step 5: Add the garlic (4 cloves), chillies, and bay leaf (1). Fry until fragrant, about 2 min.
Step 6: Add the seasoned minced lamb and fry for about 5 minutes, until thoroughly cooked; check 71°C (160°F) for ground lamb.
Step 7: Add the tomatoes and capsicum (½). Fry until they wilt and the liquid has evaporated, about 10 min.
Step 8: Add the macaroni and stir well.
Step 9: Turn off the heat. Add the flour/egg batter and mix well.
Step 10: Transfer to a baking tray and bake in the preheated oven at 150°C for about 25 minutes, until the egg/flour batter is cooked and set around the macaroni. This deconstructed version remains loose rather than forming a firm cake.
Step 11: Ready to serve!
