Method3 steps · about 20 min

  1. Step 1: Clean the Korean radish (1 pound) and peel only if the skin needs it; smooth clean skin can stay. Cut into matchsticks, using a mandoline if available.

Uses 1 pound Korean radish (mu/moo) · Water, as needed to clean the radish

  2. Step 2: Heat the 1 tbsp vegetable oil over medium heat. Add the prepared radish sticks, minced garlic (1 teaspoon) and optional 2 tsp soup soy sauce. Add salt (to taste) to taste, starting with about 1/4 tsp if using the soy sauce, otherwise about 1/2 tsp. Stir-fry 4–5 minutes until wilted and translucent.

  3. Step 3: Add the 1/4 cup water, reduce to medium-low, cover and cook another 3–4 minutes until as soft as desired. Taste and add more of the to-taste salt (to taste) only if needed. Just before turning off the heat, stir in the chopped scallion (1), 2 tsp sesame oil and sesame seeds (1/2 teaspoon). Serve warm.
