  1. Step 1: Have any optional vegan gyoza fully cooked and the other toppings ready before finishing the bowl. Cook ONE noodle portion—about 140 g fresh or 80 g dried egg-free ramen noodles—in separate water according to its package directions. Prepare the broth while the noodles cook, and time the noodles to finish last. Do not add the noodle-cooking water to the measured broth.

Uses 1 noodle portion: about 140 g fresh OR 80 g dried egg-free ramen noodles · Separate water for cooking the noodles; quantity as required by their package

  2. Step 2: In a large serving bowl, stir together 1–2 tablespoons soy sauce to taste, all 1 tablespoon concentrated vegan kombu-based mentsuyu, 1 teaspoon vegetarian mushroom sauce, 1½ teaspoons mushroom stock powder and ½ teaspoon sesame oil. Add the optional 1 teaspoon ready aromatic oil if using, and salt and pepper to taste. Keep the optional sesame-seed topping for stage 4.

Uses 1–2 tablespoons soy sauce (15–30 ml), to taste · 1 tbsp concentrated vegan mentsuyu (15ml) · 1 teaspoon vegetarian mushroom sauce (about 5 g) · 1 1/2 tsp mushroom stock powder (5g) · 1/2 tsp sesame oil (3g) · 1 teaspoon prepared aromatic oil, optional · salt and pepper to taste

  3. Step 3: Use the measured 350–400 ml broth water once. If using the optional ¼ teaspoon agar, bring this water to a boil in a separate small pot and stir in the agar until fully dissolved, then remove from the heat. Otherwise heat the same amount of water in a kettle. Pour the chosen hot water or dissolved-agar mixture into the complete sauce base and stir well. These are alternative routes.

Uses 350–400 ml water for the broth · 1/4 tsp agar (1g), optional · Complete concentrated vegan shoyu broth base

  4. Step 4: As soon as the noodles are cooked, drain the complete portion and add it to the hot shoyu broth. Add any of the optional ready cooked vegan gyoza, chopped scallions, nori, sesame seeds, chilli oil and garlic oil to taste. Serve the one bowl immediately.

Uses Complete cooked and drained noodle portion · Complete hot diluted shoyu broth · Ready cooked vegan gyoza for topping, optional; quantity to taste · Chopped scallions for topping, optional; quantity to taste · Nori seaweed for topping, optional; quantity to taste · Sesame seeds for topping, optional; quantity to taste · Ra-yu chilli oil for topping, optional; quantity to taste · Ma-yu garlic oil for topping, optional; quantity to taste
