Step 1: Mix all sauce ingredients: gochugaru (1 tablespoon), gochujang (2 tablespoons), corn syrup (1 tbsp), sugar (1 tablespoon), vinegar (2 tablespoons), soy sauce (1 tablespoon), pineapple juice (2 tablespoons), minced garlic (1 teaspoon), finely ground sesame seeds (1 tablespoon), pinch of salt and sesame oil (1 tablespoon).
Step 2: Bring the 2 cups water to a boil and add soybean sprouts (6 oz). Cover and cook for 3–4 minutes. Transfer the sprouts to cold water to cool, then drain. Reserve the cooking liquid for another use if desired.
Step 3: Thinly slice the cabbages, and cut the carrot (1/2) and cucumber (1/2 small) into matchsticks.
Step 4: Bring a medium pot of water to a boil. Cook the noodles according to the package instructions (usually about 5 minutes). Drain quickly and rinse in icy cold water until the noodles are very cold. Make two one-serving size mounds. Place the mounds in a colander to drain.
Step 5: Divide the cold drained noodles between two bowls and arrange the drained cooked sprouts and prepared cabbage, carrot and cucumber over them. Add the prepared sauce on top, serve it separately to taste, or toss everything together before serving. Halve the hard-boiled egg (1) and put one half on each bowl.
